The Etrog Citron has a very particular role in history, as it was chosen by the Jewish people as one of the sacred elements for the celebration of their "Feast of Tabernacles" (Sukkot). This implies that it was known and imported from warmer regions in the east even during Roman times. In fact, etrog means citron in Hebrew. In addition to its religious role, this fruit has been used for medicinal purposes in China for thousands of years.

Tree and fruit description

The etrog is characterized by being a citron with non-acidic pulp and presenting green leaf buds and white floral buds, unlike most citrons that have acidic pulp and buds of purple leaves and flowers. The fruit is oblong, medium to large in size, with a flat basal area and a pyramidal apical mamelon without a groove. It usually has a persistent style. The rind is somewhat thick and slightly ribbed. The edible albedo is thick and of high quality. The pulp is sweet, not very juicy, grainy, and with seeds, around a generally hollow central axis.

Uses

In addition to its religious and medicinal uses, the Etrog Citron can be consumed fresh due to the quality of its peel and its albedo. The grated peel is used as a seasoning for soups, fish, or sweets, as well as to flavor soft drinks or alcoholic beverages. The albedo is consumed fresh or processed. Fresh, it is used as a side dish with meats and fish, or in salads, whether green or fruit. Processed, it is made into purees or sauces.
