To this vibrant blend of citrus is added sea fennel, a coastal plant rich in essential oils, bringing freshness and a subtle salty touch reminiscent of the sea breeze. The result is a signature gin, fresh and aromatic, perfect for enjoying as a simple gin and tonic, though it truly shines in creative mixology.

This cocktail, the SYLEX Sour, is a citrus-forward twist on the classic Pisco Sour. The double strain technique ensures a silky texture and a flawless presentation.

Ingredients

• 50 ml of SYLEX CITRIC GIN
• 20 ml of fresh lime juice
• 10 ml of fresh orange juice
• 20 ml of simple syrup (sugar syrup)
• 1 egg white (optional, adds texture and foam)
• Ice
• A few drops of Angostura bitters to garnish

Preparation

1. Dry Shake
In a cocktail shaker (or blender), combine the SYLEX gin with the citrus juices, syrup, and egg white. Shake vigorously without ice for about 15 seconds to emulsify the egg white and create a stable foam.

2. Shake with Ice
Add ice to the shaker and shake again for 10–15 seconds until well chilled.

3. Double Strain
This step ensures a smooth and refined texture. First strain the mixture through a fine mesh strainer into a chilled glass. Then strain it again (using a cocktail strainer or a second fine mesh) into the final glass.

4. Garnish
Add a few drops of Angostura bitters over the foam. You can use a toothpick to swirl or draw a small heart if you like.

Final Tip

This cocktail makes a perfect aperitif or welcome drink for a special occasion. For a vegan version, you can replace the egg white with aquafaba (the cooking water from chickpeas), which mimics the foaming effect beautifully.
