Yuzu (Citrus junos) is a hybrid between a Papeda and an ancient Mandarin. It originated in China, but is cultivated mainly in Japan, where it has numerous culinary uses. Its juice is used to create sauces and to flavour liqueurs or vinegars.

Yuzu is a globular fruit, with an acid pulp and a highly aromatic rind. It is consumed mainly green, being at this early stage when the aromas of its rind and the flavour of its juice are richer. Its dehydrated skin is used as a spice. It is an important part of Japanese and Korean cuisine, and its use in European haute cuisine is recent but growing.
