The Citron is a pure species, parent of the great majority of acid citrus fruits (lemons, limes…). Its scientific name refers to the Median Empire, which in 600 BC occupied part of the future Persia (now Iran), from where Alexander the Great introduced the citron to the West. The Etrog Citron is used in the Jewish festival known as the “Feast of Tabernacles” (sukkōt).

The fruits of the Etrog Citron are medium-sized among the citrons. Its fleshy and abundant albedo is processed and sold sweetened in Italy. Its flesh is crisp and firm, practically acid-free, but with little juice. The aromas of the Etrog Citron are fresh and pleasant.
