The lime of Corsica belongs to the group of acidic limes and is likely a hybrid of the Mexican lime (Citrus aurantifolia) and the lemon tree (C. limon). It is characterized by its high acidity and the morphology of its fruits.
Tree and fruit description
Vigorous tree with a tendency to form a spherical crown. Large, slightly oblong leaves. Fruit of variable size, small to medium, predominantly ovoid in shape. It shows a small apical protrusion and a characteristic persistent style. Thin, smooth bark that adheres to the pulp. Aromatic and golden yellow in color when mature. Juicy, very acidic pulp, pale yellow in color. It has no seeds.
Uses
Its juice is characterized by the elegance of the aromas that accompany its marked acidity. It is used to season ceviches, fish, seafood, or salads. It pairs well with alcoholic beverages.
