Australian limes evolved isolated from other citrus fruits, adapting to the different geographical conditions of the vast Australian continent. The Blood Lime Caviar is characterized by its small, elongated fruits, which contain tiny but individual juice vesicles that are pink in color. It is understood to be a natural mutation, as the pink or blood varieties can be found in the wild in Australia.

Tree and fruit description

Slow-growing shrub, with fragile and thin branches, very spiny and abundant foliage. Very small, slightly serrated, leathery and dark-colored leaves. Small elongated fruit, usually featuring a small apical umbo. Thin, highly aromatic bark, with coloration evolving from dark green to purple or nearly black at maturity. Pink pulp, paler at the beginning of ripening. Composed of small vesicles of globose or subglobose juice that contain acidic and aromatic juice. It has seeds, many of which are aborted.

Uses

The leaves are used to flavor drinks. The dried bark flavors dishes or drinks. The juice vesicles adorn and season all kinds of dishes or alcoholic beverages, as an exclusive substitute for lemon or lime.
