The Cidro Salò gets its name from the Italian town of the same name, located on the shores of Lake Garda in Lombardy. It has been cultivated there since the 15th century, giving rise to an important liquor industry.
Tree and fruit description
The fruit is usually oval-shaped and is characterized by the presence of a large apical nipple surrounded by an areole. Its bark, which is yellow-green in color, is sweet, with a fine texture and thick. The albedo is not edible; it is soft in the mouth. Its flesh is slightly acidic and not very juicy.
Uses
In the past, the Cedro of Salò was widely used by local companies for the production of cedro chocolate and other sweets (Cedrinca) and for the making of refreshing beverages such as Cedral Tassoni, from the company of the same name founded in the late 18th century. Today, its main use is the candied peel.
