The Rugged Cidrón is characterized by its very rough bark, with numerous folds that resemble the convolutions of a brain. It is a variety of cidro that is widely cultivated in Italy, where it has an industrial use.
Tree and fruit description
The fruit is of medium size among citrons, oval or pear-shaped. Its rind is yellow, thick, very rough, and has folds. The albedo is edible and very thick. The pulp is scarce, moderately juicy, acidic with a bitter hint. It has seeds.
Uses
Its importance lies in the use of the rind-albedo combination for the production of sugary snacks, which are very typical in Italy. Additionally, the albedo can be used in gastronomy, both fresh and for making purées.
