Shikwasa is one of the ancestral Japanese mandarins. It is only found wild in the Ryukyu Islands of Japan and Taiwan. In addition to its uses in Asian cuisine, it has symbolic value in Japanese culture. The tree is vigorous and very productive, and has ornamental use.
The fruit of Shikwasa is small, orange when ripe, bitter, round and flattened at the poles. Its skin is thin, aromatic and easily peeled. The fruit produces a juice rich in flavonoids that is used commercially for the preparation of refreshing drinks, as well as as a seasoning for meat and fish. In Asian cuisine it is used both with the green rind and when ripe.
Our Shikwasa marmalade enhances the soft but complex citrus nuances of the fruit, controlling its acidity. With a very balanced flavor, the accompanying aromas enrich the experience.
