The Cedrato is a typical representative of the lemonimedica (hybrids of lemon and citron), both in terms of the appearance of the tree and the characteristics of its fruits. Its origin is unknown, but it was likely selected in Italy centuries ago. Its name is probably related to the morphology of its fruits, which resemble that of the more typical citrons.
Tree and fruit description
Vigorous tree with an open growth habit. Large leaves, bigger than those of a lemon tree. Large fruits, oblong in shape, with an apical nipple and a smooth basal crown. Rough, bulging, aromatic bark. Intense yellow color when ripe. Edible albedo. Very acidic, very juicy, and aromatic pulp, spicy. Contains no seeds.
Uses
Both its peel and juice can be used to flavor sweet or savory dishes. The albedo, with a mild citrus flavor and pleasant bite, is eaten alone or in salads.
