Australian limes evolved in isolation from other citrus fruits, adapting to the different geographical conditions of the vast Australian continent. Citrus Caviar (also known as "finger lime") is characterized by its small, elongated fruits, which contain tiny but individual rounded juice vesicles that hold an intense citrus flavor.
Tree and fruit description
Slow-growing shrub with fragile, thin branches, très spiny, and abundant foliage. Very small, serrated, leathery, and dark-colored leaves. Small fruit with an elongated morphology, may have a small apical nipple. Thin, aromatic bark, with a color ranging from yellow-green to purple or almost black at maturity. Yellow-green pulp, pale at the beginning and more intense at the end of ripening, formed by small globular or subglobular juice vesicles containing acidic and aromatic juice. It has seeds, many of which are aborted.
Uses
The leaves are used to flavor drinks. The dried bark flavors dishes or beverages. The juice vesicles decorate and season all kinds of dishes or alcoholic drinks, serving as an exclusive substitute for lemon or lime.
