The Spatafora Lemon is likely a hybrid between a lemon tree and a citron, probably very old, as it was already described by Ferrari in his Hespérides of 1646. It may be originally from Sicily, as its name seems to be related to the Spatafora family from that region.

Tree and fruit description

Vigorous and productive tree, with a tendency towards an open habit. Fruits with an apical nipple and predominantly oblong morphology, although they can be cylindrical. Rough, very aromatic bark of intense yellow color at maturity. Edible albedo. Flesh of intense yellow color, possibly even slightly orange, very acidic and juicy. Contains some seeds.

Uses

This variety is used in the essential oils industry. In gastronomy, its albedo stands out, offering a good bite and excellent citrus flavor. It can be used fresh in salads (green or fruit) or in the preparation of purees and sorbets.
