The Limoncillo de Ojós is the result of the adaptation of the original acid lime to cultivation in the Western Mediterranean, specifically in the area of Ojós (Murcia), where citrus cultivation is very old and numerous varieties considered local have been preserved. This acid lime is cultivated in many countries around the world and is known by names such as Mexican Lime, Key Lime, Lima Pica, Limun beladi... This lime is characterized by its small size, rounded shape, and the richness of its essential oils.
Tree and fruit description
Tree of medium vigor and open growth, with numerous thorns. Oval, dark leaves with a slightly serrated edge and short petiole. Small, spherical or slightly globular fruits, may have a soft apical nipple or a slight basal neck. Thin, smooth, and highly aromatic bark, especially when green. When mature, it is a dull yellow color. Greenish pulp, very juicy, aromatic, sour, and bitter. The juice, yellow-green, is acidic with hints of essential oils. It has seeds.
Uses
The grated rind can flavor numerous dishes, including desserts. The juice is used to season ceviches, salads, hummus, drinks… Its use in alcoholic cocktails (caipirinha, mojito, pisco sour…) is also very widespread.
