The species Citrus limetta originates from a natural hybridization between a Bitter Orange and a Citron. They have been known and cultivated throughout the Mediterranean basin for hundreds of years. The Sweet Lime from Spain is characterized by a low acid level in its pulp. Great botanists of the 16th and 17th centuries already mentioned and recognized that it was cultivated in Spain since ancient times. It is known to have been present in the gardens of the Medici in the 16th century.

Tree and fruit description

Medium vigor tree, rustic and very productive. Rounded fruits, medium-sized and externally yellow when ripe, with a fairly pointed apical nipple that usually has a persistent style. Granular and highly aromatic bark, with large and prominent oily glands that contain oils reminiscent of bergamot. Flesh with very little or no acidity, pale yellowish-green in color, juicy and sweet-tasting, almost tasteless.

Uses

Ornamental plant, prized for its aroma and for the long-lasting mature fruit. A good source of vitamin C in a low-acid fruit. In cooking, it adds a sweet and floral citrus note to both sweet and savory dishes. The rind is a good additive for alcoholic beverages or infusions. It can be consumed fresh. In India, the juice is enriched with a touch of honey and sprinkled with cumin, black salt, or chaat masala.
