The Diamante Cider could be a local selection from the Calabria region, specifically from the city of the same name. Its other name, Yanova, is associated with Hebrew and Genoa, the Italian port from which it was sent to Israel.
Tree and fruit description
The fruit is ellipsoidal and is characterized by its square "shoulders" and apical nipple, which gives it a diamond-like morphology. The skin is smooth but ribbed, thick, and acidic. The albedo is edible, flavored, and of high quality, thick, firm, and fleshy. The pulp is crunchy, with virtually no juice, and acidic.
Uses
Traditionally, both the albedo alone and the rind have been candied. Additionally, the albedo can be consumed fresh, and the grated rind serves as an interesting substitute for lemon. On an industrial level, in Italy it is used for the preparation of the drink known as cedrata.
