Maira Posse is a great cook and a fantastic illustrator. Through her Instagram account we discovered this refreshing and aromatic recipe for Citrus infused with blood orange that she generously shared with us. We have given it a little twist with our particular citrus harvest.
Ingredients
100 ml fresh blood orange juice
2 cardamom pods
1 tbsp olive oil
Salt to taste
1 Royal grapefruit
2 tarocco Rosso
2 blood vanilla oranges
Fresh herbs for garnish (mint, thyme, rosemary)
Method
1. Prepare the infusion. Crush the cardamom pods with a mortar and pestle and add them to the fresh blood orange juice. Let it sit to infuse the flavour.
2. Cut the citrus fruits. Peel the grapefruit and blood oranges, removing the white membrane. Slice or cut into wedges.
3. Prepare the dressing. Add the olive oil and salt to the infusion and mix well.
4. Assemble the salad: Arrange the citrus fruits in a bowl and pour the cardamom infusion on top.
5. Garnish and serve: Add the fresh herbs and enjoy.
Note: You can adapt this dish using other citrus fruits, depending on the time of year and availability. The most important thing in this case is to choose different fruits looking for the contrast of sweeter and more acidic flavours, as well as their colours.
