GASMA, the gastronomic university, has visited Todolí Citrus Fundació with a group of students who will develop several research projects focused on the knowledge, properties and culinary applications of citrus fruits.
During the guided tour, the students had the opportunity to discover first-hand the diversity of species conserved by the Fundació, as well as their aromas, flavours, characteristics and singularities. Following this experience, each student selected one of the citrus fruits they encountered to investigate its behaviour, properties and gastronomic potential.
The aim is to deepen understanding of the value of raw ingredients and explore new possibilities for their use in the kitchen. The work will conclude with the presentation of the results and the development of a dish or product based on the selected citrus fruit.
In addition, GASMA’s R&D course includes two further projects linked to the world of citrus: the development of an oil with citrus aromas and the production of citrus hydrolates for use in cocktail-making. Both initiatives are still at the research stage and envisage the preparation of a scientific paper.
Todolí Citrus Fundació will closely follow the progress of these proposals, opening up new avenues for collaboration between research, produce and gastronomy.
We hope to share the project outcomes and recipes with you all soon.
