Khatta marmalade has a subtle, mild citrus aroma. Its appearance reflects its origin, as it mixes yellow with greenish tones and the orange of the ripe rind. Its light texture contrasts with a sweet flavour, accentuated by the bitter presence of the rind.

Khatta (Citrus karna) is native to India, where it has been cultivated since time immemorial. Given the acidity of its pulp, it has traditionally been considered a lime, but it is actually an acid mandarin, a hybrid between an ancient Mandarin and a Citron.
The tree is vigorous and its leaves are of a striking dark green. Khatta fruits are very variable, both in size and appearance (smooth, rough, ribbed). The color of the rind ranges from yellow to deep orange when fully ripe. The pulp is yellow-greenish, acidic, and with a bitter tinge.
When the jar is opened, it has a subtle, mild citrus aroma. Its appearance reflects its origin, as it mixes yellow with greenish tones and the orange of the ripe rind. Its light texture contrasts with a sweet flavour, accentuated by the bitter presence of the rind.
