An annual gathering around citrus in London
Each year, the London restaurant Toklas hosts its Citrus Dinner, an evening dedicated to the citrus fruits of Todolí Citrus Fundació.
Chef Chris Shaw and the Toklas team design a specific menu based on a selection of varieties from our collection, cultivated at the El Bartolí botanical orchard in Palmera (Valencia), which brings together nearly 500 different types of citrus.
The dinner opens with an introduction by Vicente Todolí, President and Founder of Todolí Citrus Fundació, who shares with guests the origins of the project and the cultural, landscape and agricultural vocation that drives it.
The menu unfolds through a sequence of dishes in which citrus shapes each preparation. Among the varieties selected this year are lemon vanilla, finger lime, sudachi, pomelo, spatafora lemon, blood orange and bergamot. They appear in dishes ranging from raw scallop with finger lime and sudachi to brill en papillote with spatafora lemon, a blood orange sorbet served in its own shell, or a bergamot meringue pie. The dinner concludes with a tasting of raw citrus, allowing each variety to be appreciated in its natural state.
