Vicente Todolí and his kitchen-lab

In Spain, south of Valencia, is the Todoli Citrus Fundació, a veritable citrus collection created by the famous curator and artistic director of Hangar Bicocca in Milan. Perfectly integrated into the rural landscape, a small multi-purpose building, designed by architect Carlos Salazar, serves as a gastronomic laboratory and creative centre dedicated to the study of more than 400 varieties of plants.
