ORIGIN DATA:

The Spatafora might be a hybrid between lemon and citron, probably very old, as it was already described at Ferrari’s Hesperides in 1646. It could be originally from Sicily, as its name seems to be related to the Spatafora family of that region.

 

TREE AND FRUIT DESCRIPTION:

Vigorous and productive tree, with a tendency to an open growth habit. Fruits with apical mamelon and predominantly oblong morphology, although they can be cylindrical. Rough rind, very aromatic and of intense yellow color when ripe. Edible albedo. Pulp of intense yellow color, sometimes even slightly orange, very acidic and juicy. It has some seeds.

 

USES:

This variety is used in the essential oil industry. In gastronomy it stands out its albedo, of good bite and excellent citric flavor. It can be used fresh in salads (green or fruit) or in the preparation of purees and sorbets.
