ORIGIN DATA:
It is a hybrid between lemon tree and citron tree of unknown origin, but related to the tradition of lemon-citrons in Tuscany (Italy). There are descriptions of its fruits in 17th century Italy.
TREE AND FRUIT DESCRIPTION:
The fruits are of medium size, with the typical ellipsoid shape of lemons, but with a more flattened base and the apical mamelon slightly aureolated. Semi-rough and very fragrant rind, with apparent essential oil glands. The albedo is edible, thick. The flesh is pale, acidic, crunchy and not very juicy. It is considered one of the most interesting varieties from a nutritional point of view.
USES:
It is consumed fresh. The rind, grated, can be used to season sweet or savory dishes, and whole for flavoring soft drinks and alcoholic beverages. The albedo can be used fresh (salads) or cooked (purees, sauces).
