ORIGIN DATA:

The main characteristic of the Rough Citron is its very rough rind, with numerous folds that resemble the convolutions of a brain. It is a variety of citron widely cultivated in Italy, where has an industrial use.

 

TREE AND FRUIT DESCRIPTION:

The fruit is of medium size among citrons, oval or pyriform. Its rind is yellow, thick, very rough. Its albedo is edible, very thick. The pulp is scarce, moderately juicy, acid with a bitter touch. It has seeds.

 

USES:

Its importance lies in the use of the whole rind-albedo combination for the elaboration of sweet candies, very typical in Italy. Besides, the albedo can be used in gastronomy, both fresh and processed as a puree.
