The Perfume Academy highlighted its dedication and commitment to the study and dissemination of citrus fruit and citriculture and its work for the preservation of citrus biodiversity. The core of the Foundation is its collection of almost 500 varieties of citrus from all over the world in its botanical orchard, a unique garden on the Mediterranean coast in the town of Palmera. Its laboratory, equipped with the advice of Ferran Adrià, allows chefs from all over the world to experiment with the aromas, flavours, textures and colours of the citrus fruits in the collection.
